Recently I shared how I was inspired to try my hand at homemade mozzarella sticks. This week, I’m sharing the main course of that dinner, the hero. That is chicken parmesan of course, the favorite in our family. I usually try not to make it too often, although lately I’ve been prone to making it my new way, baked. For a special birthday occassion, I went back to the old fashioned way just how he likes it, which means frying it before putting it in the oven. To jazz up the standard favorite a little bit, I wanted to add some flavor to the dish. How to do that? Just add more ingredients. To give the entree a little more substance and extra taste, spinach and mozzarella was added to the mix. Even with extra ingredients, the recipe is still super simple to create, and will definitely result in some happy customers at home.
1 pb chicken breast
Breadcrumbs – 1 cup
3 eggs
Flour 1/4 cup
Spinach – 1 cup
Mozzarella – 1/2 cup
Tomato Sauce – 1 jar
Preheat the oven to 375.
Mix eggs, flour and breadcrumbs, each in their own separate bowl. Dip the chicken in each bowl, starting with the flour, and ending with the breadcrumbs. Repeat with each piece of chicken, and cook in oil in the pan until done.
In a large casserole dish, coat the bottom with tomato sauce. Then add the just cooked chicken ontop.
Cover with spinach, and then more tomato sauce, covering entire tray.
Add mozzarella slices.
Put in the oven and bake for 40 minutes.
