NYC weather here, and everywhere else in the country is preparing for a deep plunge in temps this week. Everyone is getting ready for the deep freeze, as was evident on my walk home this evening. I had planned to stop at Trader Joes for some groceries, but when I reached it, the line wrapped around the block. I went home, defeated by the grocery store not for the first, and most certainly not for the last time. And though I didn’t make it into the store that night, I can imagine everyone was stocking up on many of the below ingredients, before the frigid temperatures force us all indoors for an undetermined amount of days. Luckily, an earlier placed order saved the day, and I had the last laugh with an easy soup perfect for this cold NYC weather.
1 Pound Stewed Chicken via Fresh Direct. Rotisserie Chicken would work well too.
1 Carton Chicken Broth.
2 potatoes.
1 cup carrots.
2 scallions, 1 tbsp onion.
3 tbsp salt. 1 tbsp pepper.
1 tsp garlic salt.
Mix EVERYTHING together in One Big Pot, stirring occasionally.
Head Bread at 350 degrees in oven. Serve w/ Soup.
Heat everything until cooked in the pot for about 20 – 25 minutes. This is such a simple, easy dinner for weeknights during the winter! Use pre-cooked chicken (like a rotisserie chicken from the supermarket), and all together this meal should come to less then $25 for two people. Plus, the best part – it makes amazing lunch leftovers.
