Make This: Garlic Cauliflower Mashed Potatoes Puree

I’ve been trying to eat healthier lately, and though this has goal has been intermittent, one thing does remain a fixture in my kitchen. I love cauliflower, and am always trying to come up with new ways to eat it. Back in the city after college, and living at home, I remember trying to live on the South Beach Diet. I would fill my mom’s fridge with food, and adhere to several weekly goals. One of my favorite things to make was the cauliflower mashed potatoes. Not only was it easy for a bachelorette like myself, but it was cheap. I matched it with cold cuts or a sandwich, and made it for dinner weekly. At this point, I’ve done the South Beach Diet many times through the years, all at different levels of tenacity. However now, things are different. I plan out my meals ahead of time, and I have to worry about what goes into two stomachs, and what to make for two hungers. And I must say, I’ve adjusted quite nicely….

Below my own version of the beloved South Beach recipe.

1 Head cauliflower

1 tbsp olive oil

2 garlic gloves

1/4 cup grated parmesan cheese

1 1/2 tbsp butter

2 tsp salt and pepper. Pinch of garlic salt. 

Steam or boil cauliflower in a pot until soft. Add to blender with the rest of the ingredients and mix/puree. Top with parmesan cheese shavings.
