Rejoice taco lovers! It’s National Taco day, and all across the land, taco establishments are celebrating the love of the taco. Maybe you’ll go out and enjoy a crunchy, hearty, beef taco, or perhaps you’ll celebrate at the dining room table over a homemade taco night. Typically, Mexican nights are a favorite in our house complete with chips, salsa, and homemade guacamole from hubby to be, (one of his favorite treats to make). Other times, in an attempt to keep things a bit leaner, we try to subtract the carb. That’s why for this particular taco night we instead tried a turkey taco salad. It includes all the same, tasty, seasoned ingredients mixed together, minus the actual tacos. And it’s pretty darn tasty. Here is my take on a turkey taco salad:
Mix a little olive oil and ground turkey in a pan and saute until brown. Add the beans, and corn and blend. Then add salsa and shredded cheese.
Top with sour cream
