Today is national watermelon day, and I’m celebrating the fact that after almost an entire lifetime disliking a food, (or assuming you do), you can suddenly, at any time, discover you love it. That’s the case with watermelon which I only just ‘discovered’ last year. Ever since I stumbled upon that fact I’ve been both enjoying it, and trying to figure out how to eat it enjoyably without seeds. With National Watermelon day upon us this first week of August 2016, there’s no better time to get a little creative with one of my new, favorite fruits.
1. Watermelon mozzarella salad. Cut up watermelon and strawberry with mozzarella cheese slices. Add a pinch of olive oil and some honey. This is a delicious, summery snack that fills you up for the afternoon. Watermelon also helps detoxify and hydrate the body, which is so important in summer.
2. Watermelon mint feta salad. I still can’t figure out exactly what it is that makes watermelon, feta, and mint such an insanely good combination. But something about all those flavors mixed together creates a savory and sweet summer snack.
3. Watermelon rosemary detox water. I consider myself a mad scientist when it comes to detox waters. Ever since I started learning about them last summer, I’ve love trying to research different kinds, and create my own at home versions. Since, as previously mentioned, watermelon is great for hydration, it makes it the perfect ingredient for an infused water. Add rosemary springs which provide iron, and vitamin B6, and 1 cup of ice. Let it brew in a pitcher, and enjoy.
