Easy Weeknight Dinners: Lemon Chicken Orzo Soup

It’s not so often that a new dinner in the rotation gets a big reaction from the husband. Truth be told, he can be hard to impress. Though I’ll never stop trying. That was put on hold when I whipped together one of these easy weeknight dinners of the liquid variety. It really is one of the best go-to’s on cold, winter nights. This lemon chicken orzo soup, perfect for the Bomb Cyclone is easy to make and affordable to create.

I can’t imagine planning and cooking for an entire family one day. Even now, just planning for two, it can be hard to come up with easy weeknight dinners that will keep us both healthy and happy. But this soup definitely fits the bill. Plus, for me, a staunch defender (and queen) of half meal prep, it’s the perfect option. Save yourself the hassle of pre-preparing chicken. A rotisserie chicken will do you just fine, and save you both time, money, and energy. It doesn’t make you any less of a person for using one either, I swear.

INGREDIENTS:

1 rotisserie chicken

3 cans chicken broth

3/4 box of Orzo

bunch of parsley

3 lemon slices

1 tsp salt and pepper

1 celery stalk.

1 garlic glove.

Mix garlic, celery and chicken broth in a big pot until simmering a little. Add cut up rotisserie chicken and cooked orzo (cook separately for 1o minutes). Mix in parsley, salt, pepper and stir well. Add three lemon slices and let simmer for 20 minutes or so. Voila! Of  the endless easy weeknight dinners to create, this is definitely one of the easiest and tastiest you’ll make this winter.
